Delicious Italian Pork Chops


Tonight I am making my favorite pork chop recipe. I haven't posted anything in awhile, I know, but I don't have much time. Here is the recipe:

Italian Style Pork Chops

1 sleeve crushed saltine crackers
1 cup grated Parmesan cheese
2 tsp Italian style seasoning
1/8 tsp garlic powder

2/3 cup butter, melted


Melt butter and set aside. Crush crackers, and add cheese and seasonings. Dip chops in butter and coat with cracker mix. Bake in greased pan 30-45 mins at 425 degrees. This makes 4-6 chops. SO GOOD!!!!

Souper Saturday


Well, maybe a better goal for super Saturday would be once a month. Busy busy we are!! I've been doing a little bit of freezer cooking today and this soup recipe is one that I made. It really makes two meals for us if I make some rolls to go with it. It is a really good soup!!!

Broccoli-Cheese Soup

6 cups chicken broth
2(10 oz) package frozen cut broccoli
1/4 cup chopped onion
1/2 cup butter
2/3 cup flour
1 cup whipping cream
3 1/2 cups shredded cheese(I use a mix of mozzarella and colby jack)

Combine chicken broth, broccoli and onion in a Dutch oven and bring to boiling. Reduce heat and simmer uncovered for 10 minutes. Melt butter in a small saucepan and stir in flour until mixture is smooth. Add to the larger pan and continue cooking while stirring, blending well, for about 5 mins. Stir in cream and cheese until cheese melts. I then let it cool and put it in a freezer safe bag. Take it out the night before you want to serve it and then warm it up.

Product


Well, it has been one of those weeks that leaves no time for blogging. Plus we're heading out for the weekend tomorrow, so there won't be too much time this weekend either. Between caring for the kids by myself for a good 5 days while Brent was sick, to feeling sick myself, to potty training my almost two year old it has been a busy week. I haven't even been cooking too much(since we have the new freezer I stocked up on frozen pizzas and have been taking the lazy approach to cooking). But not for long!! I promise in the next week or so to be really posting some great recipes. In the meantime I've found a product I recommend. We like yogurt around here and I can get it for super cheap on sale with coupons, so this snack is a reasonable one. I have one Popsicle maker that I got at the dollar store a year or so ago, but before we had our freezer we didn't have much space for it. Now that we have our freezer I've been making yogurt Popsicles for the kids and they are LOVING them! I take yogurt that is closing in on the expiration date(I had some since I got over 32 things of yogurt awhile back on sale) and just pour them into these Popsicle mold and stick them in the freezer. The cheapest place I've found a pack that makes more than 4(my dollar store only made 4) is diapers.com where they are $5 for a pack that makes 8. The possibilities are endless. So far we've made juice pops, root beer float pops(root beer with whip cream mixed in) and I'm thinking of trying out some pudding in them. Great for snacks!!

Souper Saturday

I decided to have a soup post every Saturday. I love soup! It goes a long way for get togethers, is usually pretty economic to make and great to freeze for a quick dinner. This one was created by my mom, so the credit goes to her. I've made it several times for our football parties with friends.

Salsa Chicken Soup

2-3 chicken breasts, cooked and cubed
4-6 cups chicken broth
1 cup mild salsa
1 can drained black beans
1/2 cup corn
1/2 cup milk
1/2 box Velveeta, cut up(use coupon here for $1.00 off!)

I just put everything except velveeta and milk in and let simmer for 10 minutes or so, then I add the cheese and milk till it melts. We usually garnish with some sour cream and corn chips.

Crock pot Chicken Alfredo


Get ready for an easy and delicious recipe! This is my favorite crock pot recipe b/c of its ease of preparation. Here's how:

Crock pot Chicken Alfredo

2-3 chicken breasts, cubed
1 can Cream of Chicken soup
1 soup can water
8 oz cream cheese (I end up using about 2/3 of a pack and it tastes fine)
1 packet Zesty Italian Salad dressing mix
1 stick butter (here again I end up using about 2/3 of a stick of butter and it tastes fine)

Combine ingredients in crock pot and cook on low for 4 hours or high for 2 hours. As I'm walking by I'll give it a stir every once in a while. Cook noodles and toss with alfredo. The sauce is runny at first but thickens. It is also great left over.

I had started a recipe blog a year or so ago, but did not continue b/c at that time of my life I was just too tired to keep it up. I'm hoping to post at least one recipe a week on here. I love trying new recipes, and I'll post my favorite new ones here!
